So I've only had Summer Bliss once at New Belgium's brewery (it was fantastic!) I tried to match the kcal of 160 (this comes out to 162 kcal). I couldn't remember the hoppiness, bitterness or depth of maltiness, so I would adjust by replacing the Munich and only do 1.75 oz hops at whirlpool. I think, though, you would get some beautifulness while dry hopping during active fermentation. I'm thinking the additional puree could kick off another fermentation to get ABV to published amonut (5.5%), or could otherwise be helped to get there. I'm not sure about spice and flavor amounts, so any feedback would be appreciated.
