NEIPA water chemistry help

Hi guys

I have been brewing a NEIPA kit from my local brew shop which usually turns out pretty good. it has a really fruity hop aroma but there is a slightly off bitter flavour. im just using untreated tap water and i have no idea of the profile.

I bought some RO water and treated the water with a chloride to sulphate ratio of 2:1 as this seems to be the standard for this type of beer. The resulting beer is quite different. it seems to have lost a lot of the hop aroma, and there is more of a "boozy" flavour. The gravity reading was higher than my previous attempts, so i guess it is a higher abv, but im missing the fruityness.

Any thoughts as to why ive lost the fruity hop aroma, i thought it is probably due to the chloride to sulphate ratio, but this is the recommended ratio for a NEIPA?

CA 100
MG 18
NA16
CL 186
SO 93
HCO 0
 
How many gallons did you make?
Are those numbers in grams?
What did you do to avoid oxydation?
 
Ah ok, i was hoping it wasn't grams, lol.

Biggest issue i have had with dry hopped ipa styles has been oxygen exposure. Only take a little and in a few weeks you have a mild pale ale.

Other than that, maybe up the amount of dry hop?
 
the other difference is that previously i was fermenting it under pressure, this time i tried without pressure after i read not to with IPAs? ive probably changed too many variables at once making it harder to pin point whats changed the end result
 
One profile I got for a "pillowy" NEIPA profile (I believe from The Apartment Brewers YouTube) was:

Ca2 - 95
Mg2 - 3
Na - 16
Cl - 300
SO4 - 100
HCO3 - 0

He had another one that was his NEIPA profile that is:

Ca2 - 95
Mg2 - 3
Na - 34
Cl - 156
SO4 - 88
HCO3 - 16

I haven't had a chance to use either one yet but going to try on my next NEIPA when I get around to making one soon.
 
Did you use the same hops? We're they fresh'ish? Was the kit exactly the same? As the other posts mentioned, there are a few variables that can change your brew.

yeah the kit was the same as before and everything was fresh. i was thinking does the high chloride to sulphate ratio tone down the hops and bring through the boozy flavour? as i have read that high sulphate emphasises the hops?

I am doing another Neipa kit now which has a much heavier dry hop so i will see how that turns out
