Well I Finally feel I have something Worthy to contribute to the Forum after all!

lately I've been getting back into brewing! hold on don't get too excited brewing ginger beer non alcoholic soda so to speak.

years ago to go full circle the pursuit of a naturally fermented ginger beer is what got me into hombrewing in the first place.

have you guys heard of a ginger beer "bug" ?

back "then" I called it a ginger beer "Mother" it's sorta like a sourdough starter except to feed it ginger and sugar.

well I set about making one of them recently

it was pretty easy I tried to feed it when ever I fed my GF sourdough starter.
oh yeah I guess I should add this I've starter making GF sourdough bread.
I think making the sourdough starter led me to make the ginger beer bug.

anyhow one thing has led to the other and here's my First brew I've done in over a year.

anyone on here had a crack at a wild fermented ginger beer brew?

this ginger beer is a little different as you see using a wild fermentation.

ginger is readily available for me as is tumeric. once you get the bug going you can use it to ferment any fruity beverage.

Awesome! well there's more comming next my fermented mandarine juice.

then I'll be harvesting my Tumeric and getting some happ gut fermentations happening with this ginger beer bug.

Yes, I have tried something like a ginger bug. Only once and about 5 years ago
It definitely did work but then it died..

sweet yup I'm all eyes and ears on that one Zambi.

yup all is well on the home front :) .

I can buy both at the grocery, not expensive.
But first, some research!
 
The Ginger Beer we have in the stores here is stupid sweet. That is a neat idea. The way I used to enjoy my Ginger Beer (Dark and Stormy) would be very evil for Ben though.
I get bad heartburn if something is very heavy on ginger. I wonder if the fermentation takes away some of that?

what I put 175 gram in that 1.2lt bottle she was plenty spicey me old mate:p.

evil until I got prescribed Esomoprozole that shoit take fire out of anything spicey and let's me sleep like a baby.

it's great I'm growing Chillies again so I can incorporate them back into my diet.
Habeneros little pocket rockets they are.

made sime Thai style sweet chilly sauce with them last year it really got the burner working:D
 
Those peppers might work nicely in a Curry too.
When my wife was alive, she hated Curry, and these days I get a craving to make a toned down Jamaican style chicken here and there. I replace the Scotch Bonnet with Red Bell and Jalapeno. Those sweet Chilies might be nice in something like that.
Next week, I am going to try a Crock Pot Curry with a pork roast.
