Here is what i have done so far for fruit additions in sours and fruited beers.

I send about 76 gals of beer to the fermenter and package exactly 4 1/2 bbl kegs.

Tangerine/blackberry sour ale
pitched w/ voss and servo:
-amoretti craft puree tangerine: 9#s(1 gal jug)
-amoretti craft puree Black berry: 4x25.4oz
post ferm:
-30g amoretti black berry flavoring(water soluble)
-100ml Vanilla extract

Strawberry/peach Kolsch
post ferm:
-55g amoretti strawberry flavoring
-40g amoretti peach flavoring
-750ml amoretti craft puree peach
-200ml lemon juice

coconut black ale
Cool(16c)
-1L coconut flavoring from LD Carlson
-45ml Vanilla extract
Crashed(~4c)
-500ml coconut flavoring

Cherry/Lime Sour
Pitched w/ 250g voss and 30g servo
-4.5#s Sour Cherry Amoretti Craft Puree

-8x946ml Tart cherry Juice(Antiox Solutions brand)

Pineapple/Mango Kolsch

-4x1.36L Dole Pineapple juice cans

Blueberry Kolsch(very good!)

-200ml blueberry flavoring from LD carlson

Blood Orange Gose
pitched w/voss and servo
-4.5lbs blood orange amoretti craft puree

-4.5lbs blood orange amoretti craft puree

-75g sea salt(no iodine)

Juicy DIPA

-4.5lbs Passion fruit, Guava, Orange amoretti craft puree
