I pitched the yeast on the American wheat beer part of a braggot this morning. Once fermentation is mostly done I'll add this.

Nice! I need to stop messing about and use my remaining honey in a Braggot.
 
I would love to hear the process on this going forward.
So, you brew a wheat beer, add the honey, and do something close to a mead with it? Is it open fermentation like a mead?
 
What is a Broggot?
 
I've brewed one a few times different variations and there are couple breweries around me that have/had them. Kinda fun experiment not a favorite
 
I'd say it's a combination historical / enthusiast beer. You're not going to want it every night, but it is a pleasant break from IPAs.
Locals did one a year or 2 back and it was quite good.
 
A little late to the party on this one, but this thread has got my wheels spinning...

I'm thinking about brewing an oversized batch of Shady Bohemian, leaving about 2 1/2 gallons in the fermenter and topping it off with an equal volume of unfermented mead....

Most likely M84 Bohemian Lager, possibly White Labs 800 if I'm feeling it, but I usually stick to dry yeast. I'll just add it to the fermenter and let the yeast cake rock on after I bottle it down to about where I want it.
