I haven't bottle conditioned in a long tine. I brewed a Biere de Garde and I see where some lager it for weeks and some bottle condition. If I need to add gelatin but I was thinking of bottle conditioning/carbonating. When do I add the gelatin if at all? Am I making this way too complicated?

If you're not cold crashing before bottling I wouldn't bother.

Gelatin really only works for clearing if you cold crash and trying to mix it in each bottle would be an enormous hassle.

I decided to "bottle" condition in a keg at room temp for a couple weeks then drop it in the fridge for a week or so. I did this awhile back and the beer was excellent. So many batches, too many methods.....

I used to cold crash with gelatin all the time when I bottled. just make sure drops out or you end up with goo in the bottles.
