1 gallon batch?

I decided to play with a one gallon batch (just for the experience). the Question is the recipe calls for whyeast-french saison 3711 yeast. It came in a slap pack and I understand how it works.
But...I should I use the whole pack of yeast in a one gallon batch?

Recipe
1.9 lb Belgian-Pilsner
.5 lb Canadian-Honey Malt
.5 lb Honey

.8 oz Strisselspalt (60)
.8 oz Strisselspalt (1)

Wyeast- French Saison 3711
 
Might as well. It's over-pitching but it shouldn't hurt.
 
I have been looking at a lot of recipe's for 1 gallon brew's, I have seen that they call for half of the yeast pack. darn it seems like such a waist.
if I do this what can I do with the other half? Remember this is a slap pack not dry yeast.
 
Brew two gallons? ;-)

It's probably a loss but think of it this way: You're testing a beer recipe. If it doesn't work, the money you've saved on ingredients more than offset the loss of half a smack pack of yeast. There's another option if you want to brew again soon: Put the other half into a starter and brew using it.
 
nice idea Nosybear, how long would a starter last before I would need to do another 1 gallon brew?

2-3 weeks in the fridge
