    I did a partial boil, three gals, added a little over to gals once in fermenter, this makes sense but my sample came from the top, wouldn't the more concentrated wort have been on the bottom still?

    Is there a difference in the "chemical" make up between the two? I am an extract with grains brewer, most recipes call for both LME and DME, why not just use one or the other?
