    American Hefe's turn around fast, drinkable as soon as they are carbed. You can have beer in 21 days. QHB - I'd avoid the Kolsch yeast for this time frame. It takes several weeks to a couple months for it to clean itself up in my experience. Tastes bad when green.

    When I batch sparge I heat up the HLT to at least 185F. In colder months, closer to 190F. This puts it at 170F, which I hold for 30 minutes then drain.

    I'd back off the crystal some and maybe add vienna or munich to give a bready / malty quality. Nugget hops might be part of it too, I think they add a kind of floral sweetness when added late in the boil.

    Nothing wrong with brewing with extract, especially for these types of experiments. I wonder if you adapt the recipe to add grain just how much of a change it would be? Getting fresh extract is the key to making good extract beer.

    Also, make sure to get the freshest yeast possible. I'm very picky when I buy yeast, I check the entire bin at my LHBS to get the freshest. Some stores file the older yeast up front.
