The only mix I made wash with some mashed melon and apple cider, it turned pretty sweet but good stuff.

I would just give the beer more time to clear itself. Just make sure it still ferments.

You can increase the hops a bit so it won't come out too sweet the next time. Or you just can reduce the honey, I am not big fan of it.

I used to bother with the readings, but now I use the same old recipes and everything is already tested. Don't do it anymore.

Cascade is my favorite by now, I had only great results with it.
