    Hallertau for the classic pils feel and saaz to add a bit of floral spice...these two are always good with pilseners. As for why your beers came out so different; Maybe age of hops has something to do with it, acid level of water versus hops, temp the hops get the best flavors and aromas etc...

    At least a couple weeks at slightly below room temp before chilling. I usually chill at least two days...it gives everything a chance to settle.

    All good points. Right now I am less concerned with dealing with the legality of shipping and more with finding out where to ship and planning my brew days appropriately. the legality is always going to be a"work around " situation.

    galaxy/ mosaic columbus/ centennial simcoe/ citra ekg/ magnum .....but i gotta say that amounts, temperature of wort, and so many other variables can more for a good/ or bad beer hop combo: but i like the question and answers;)

    brew at 4300 ft and i can tell you the main difference is that my water boils at 108.3 ....I didn't know about the hops thing though
