    Wyeast XL 3068 Weihenstephan Questions

Hope this helps. This is from Wyeast page. Profile: The classic and most popular German wheat beer strain used worldwide. This yeast strain produces a beautiful and delicate balance of banana esters and clove phenolics. The balance can be manipulated towards ester production through increasing...

    Milling your own grains...

Have same set up. I bought 2 Chard mills, while they were on sale for $20/ea, @ FleetFarm. These work great and are easy to adjust for different grains, which i have to do each brew day for wheat and barley. Not sure if I will ever need the second one, but nice to have a back up for sometime in...

    Help finding BSG hops

Greetings all, Having trouble finding a supplier of BSG hops, since my local closed permanently back in Feb. I bought all he had of Hallertau the last week he was open, but now I'm running low and need more. I'm looking for online supplier for BSG Hallertau Mittlefruh. I have tried Yakima...

    More reasons to home brew....

Would just like to use quotes from others as a response to this, "I don't think this is the place to derail and get on a stump. " -Brew Mentor "I'll sit this one out. I do think it's time for admin or mods to post and sticky a clear Terms of Service for using the forums if they don't want to...

Is harvesting and washing yeast really worth the effort?

Depends on how often and how much you brew, I would think. If you're brewing one 5 gal batch a month, it probably isn't worth the effort. If you're a pro drinker (which I am not) and have to brew a big batch every week it probably is worth the time to learn a proper harvesting/ storing...

    Hefeweizen tastes like wine

Yes, you fermented too high. 74 is the top of temp limit for this yeast. I use 3068 for most every brew and it doesn't like being at that high of a temp. 64-65 is optimal starting temp for this yeast for first 3-4 days. Then can be broughtup to 70 or so to finish off for last couple of days...

    Hefeweizen - slight off flavor...again.

I brew every 2 weeks, so have never kept yeast for longer. If you're going to skim yeast to keep it from a hefe, the best method(IMO) is to skim 3 times, once daily for days 2-4 of ferm, the first skim will be full of hops and trub, the second skim is the only one worth keeping as this is the...

    Update dictionary??

I was wondering if during all these updates, you're planning on updating the autocorrect dictionary to have more brew used words in it.?? For example why does it autocorrect trub to grub and hefe to here. I know there are a couple more that I can't think of right now.

    Hefeweizen - slight off flavor...again.

I put the lid/airlock on mine after skimming yeast on day 3 , for sanitation reasons since I don't need to get into it again until I rack to bottling bucket. And also, I move my fermenter to a more open space for last 3-4 days to let temp rise , but if you're keeping yours in same clean...

    BIAB Issues

Using an ice chest with a pond pump works great , important step is to have max water in ice chest and DONT put the return water hose into chest right away for at least first 3-4 gallons. I just add a gallon as one is drained off for first couple minutes and after 4 jugs I can put the...

    BIAB Questions

Ditto the double milling of grains for BIAB. I used to get high 70s for efficiency with BIAB when I would drain off most of the wort then put the bag at top of kettle, using a large collander to hold it, and then poured sparge water slowly over the hanging bag. On my last BIAB a few months...

This is because the actor playing Spartacus died between seasons, so they had to change and rewrite where they were going.

    Hefeweizen - slight off flavor...again.

Taken from braumagazin Brewing considerations for the enhancement of banana flavors Open non-pressurized fermentation in combination with a suitable yeast like the classic W68 can already produce a sufficiently strong banana flavor. High OG or High-Gravity wort can promote the banana flavor...

    Hefeweizen - slight off flavor...again.

You are correct. If you want banana I have found a grist bill of 65%+ wheat and starting fermentation at around 63F(17C) and holding for 3-4 days before raising 1-2 degrees F per day for 3 days ending up at 69-70F (21C) will give the the best results. If you get above 70F you're likely end up...

    Hefeweizen - slight off flavor...again.

I've only made hefe's since starting to brew, and the only time I had something similar to what you are saying is when I over pitched. In my experience, (claiming no expertise) my hefeweizens have turned out much better and more consistent by under-pitching. Scroll down a bit in this article...

Different pH Value in Recipe and Water Calculator

I had/have this issue with my recipes also. If I put Acid malt in my recipe the water calc would ad it twice, once in malt bill and then in Acid Addition table. I just edited recipe and removed acid malt to get water calc closer to correct. I put it down to using a Mac, since when I edit...

    Ph of source water

The reason for this question : the recipe I just brewed, Weizen 3 , when I checked mash ph(calibrated meter) it was about 5.0 but according to recipe and water calc should have been more in the 5.4 -5.6 range. But I guess, as always must be just me . Thanks anyways

    Ph of source water

the DI water I use has a low ph so went to change in water chem page and noticed on water chemistry page that a change to the ph of source water, without changing any other parameters, only affects the overall ph by 0.01 from 8 -4. source ph 8 to 5 = 5.53 ph 4 = 5.52...
