I'd use the top one. Caramel malts have no place in a Marzen, IMHO....

It will. StarSan in moderately hard water will go cloudy in a few days or weeks. I mix mine with RO water and it lasts until there is so much gunge and dead fruit flies in it I can't stand to use it any longer, then mix up a new batch.

It's cherry-smoked malt, quite a bit tamer than the oak-smoked stuff we're used to.

I wouldn't put campden in it. Likely, from the picture I saw earlier, there's no need. It looked kind of like yeast flocs to me. Keep it cold and drink it fast and given the small batch size, you'll likely be finished with the beer before it can go bad.

Start by working with a consistent method; otherwise, you're trying to hit a moving target.
