    Fresh hop ale

I understand. Maybe instead of boiling those hops at boiling temperature, do a whirlpool at a much lower temp. ( 70-75C ) for 10-30 minutes. It will get you even more aroma and flavour into the beer.

    First taste extremelly bitter....

I just dump my hops in the fermenter and it works great. However, 25 gr hops for 5 liters is a stretch. My latest IPAs used something like 2-250 gr for 20 liters. They are pungent and real grapefruit bombs. They would not have turned the same with only 100 gr of hops. Also, I would try to dump...

    Fresh hop ale

0.75 oz for dry hopping for the whole 5 gallons? Or are those punds? For 5 gallons, the dry hop will not give or do naything to the beer. Especially with fresh hops ( wet hops ), which you need to use like 3-4 times more than regular pellets or leaf. ABV?

    Bittering hops vs noble hops

Even if you use more hops to bitter ( hop with lower AA% ), you will not save money. A bittering charge of a high AA% hop will suffice for most styles. 25 gr of Magnum will give around 30 IBUs and you can build from there, by adding late hops, flameout, etc. Magnum is a cheap, clean and...

    thinking about yeast blends again

The two yeasts will both fight for your beer, but you will not get " goodies " from both. If you wish to experiment with blends, I can highly recommend Imperial A24 Dry Hop

    Length of time in secondary

I don't do secondary anymore, but 4 weeks is a lot of time. Dry hopping for more than 7 days will negatively impact the beer. I only do 3-5 days of dry hopping, as anything over 7 days leaves detectable vegetal flavours, which make the beer unpleasent.

    Barleywine Ideas

A barleywine is kinda like a Baltic Porter made with Ale yeast. I would mix some Marris Otter/Pale with some Vienna and Munich I ( light ) as base malt. English Dark Crystal 90 L 3%, Caravienne 3% and some Special B 2%. Flaked wheat or flaked barley added for head retention. ( 5% maybe ) A...

    Choc-Coffee Stout

I had great results with adding " coffee " notes to my porters and stouts using http://theswaen.com/product/ourproducts-malt-for-beer:black-swaen:blackswaen-coffee/ I can get from TheMaltMiller UK. Although no coffee was added, the coffee notes were present, smooth and not overwhelming.

What are you drinking right now?

This Session beer is almost 2 weeks carbonated in the bottle here on Sunday: https://www.brewersfriend.com/homebrew/recipe/view/512075/pale-ale - tastes light, medium body, lots of citrus from Cascade and the Yeast. Very refreshing and easy going. This WLP644 beer will be soon carbonated in...

    Choc-Coffee Stout

Latest 7.5% had 125 gr Raw organic Cocoan beans, which I crushed and 4 vanilla pods, all soaked in 80-90 ml bourbon for 2 days in the fridge. Dumped the whole jar in the primary. Left for 5-6 days, then botlled. I still have a few bottles which are now 4 months old and the beer is better than...

NZ beer Monteiths American pale ale

I can get Monteiths beer in some supermarkets and tried them all, but they are not good. Not even decent for the asked price. Are they better in the home land or is it the same beer?

Red ale with Munich and Chocolate Malt

I am not a fan of Crystal malts, but I cannot imagine any Red/Amber ale without additions of Crystal malt. If you simply want the color, then brew your favourite IPA and put some beet juice in the fermenter for the color. If you want a Red ale, then you need some maltiness / characted in...
