Here's a first for me. I usually take my spent grains out of my mash bag and add them back in the plastic bag I got from the homebrew shop, makes for easy disposal.

I left it sitting by the door a few days, came back and the bag is completely inflated. Opened the bag and got a huge burst of soury mash aroma in my face, wowzers.

yes spent grain can sour in hours actually depending on the weather, I live in a humid climate and 80% humidity is common so helps the grain sour easily for that reason I add the grain to a scented trash bag as soon as it cools and add it to the compost, then birds and bugs have their hay day
 
I used to sour my chook food grain within days yes them enzymes dont muck around at room temp. Cooks love the sour lacto grain itsngot some good bacteria in it for em. I treated it just like sour dough starter keep a bit back for next batch and within 24 hrs its fermenting like crazy:confused:.
