My 50% Munich 1.056 marzen got down to 1.012. I usually don’t have attenuation issues using lots of Munich. My Dunkel is 75% Munich and it also attenuates just fine.

If I use a lager yeast, I set the refrigerator to 48, go do something for two or three hours and pitch when I get home. 5 gallons going from 80 to about 62 at 48, will take about 3 hours.
I do not think you will get 1.008FG with that much Munich. If you do, let me know what you did.

I mashed the beer I just brewed lower to see what it would do with the Munich, but I used a yeast that doesn't attenuate that well.
