So water chemistry baseline was wrong. Next time need to add calcium chlorite instead of gypsum to get a malt forward beer |

Not carbonated yet. Set to 10 psi. Little bit of a bitter astringency. Don't know if it's water chemistry (gypsum instead of calcium) or too much roasted malt. Will see how it develops |

Bitter astringency is pretty much gone. Flavor profile is right on, but got some notes on a thinness of body and mouth feel. Head retention is good |
