Notes

-strike at 138f
Decoction brew. 20-30 minute at 128f. Remove 13 liters (3ish gallons) boil for 5-15 minutes.

  • Make sure to drain off most of the fluid from the grain in the mash before the heating the removed mash/grain. You should see no standing fluid, just wet grain in the pot. It is going to be really stiff until the mash heats to a boil. I stir constantly as Im heating the decoction and while it is boiling.
  • Return decocted mash to tun and achieve 148-152. Spray some cold water in to adjust temp if needed.
