Notes

Water:
Pre-boil volume: 4.5 gallons
Sparge volume: 2.5 gallons

Mash:

  1. Heat 4.5 gallons water to 150 F, cook grains for 45 mins.
  2. Increase temp to 170 F let sit for 15 mins.
  3. lift basket to drain, submerge, and let wort setting. repeat once.
  4. sparge with the separately prepared 173 F 2.5 gallons of water for 30 minutes.

    Boil: (uncovered - total boil 75 mins.)
  5. Raise wort temp to 212 F.
  6. Once boiling at 1 oz hops for 45 mins.
  7. add 1 oz hops for 30 mins.
    • Do not allow a boil over!!!

      Whirlpool:
  8. reduce temp to 180 F for 30 mins in a whirlpool (to aerate, no hops being added).
  9. Crash temp to 64 F before added to fermentor.

    Fermenting:
  10. Ferment at 64 F for 6-7 days.
  11. Increase temp to 69 F add 3 oz hops for 5-7 days.
  12. Decrease temp to 36 F for 2 days.

    Kegging:
  13. Transfer to keg, set psi to 20, then quick purge to release oxygen and let come back up to pressure. Let sit for 2 days
  14. Turn of gas, purge, set psi to 9-11 and check carbonation, if good let mature 5-7 more days.
