Notes

Club cider buy from Amesbury. Add Camden tablets. Wait 24 hours. Add pectin enzyme one hour before pitching yeast. Pitch yeast from a 2 liter starter made from 50/50 water to cider with 2.25 oz of DME with yeast nutrient as well.

Add vodka to airlock. Ambient basement temp around 67F. Ferment for 3 weeks. Top off fermenter after Krausen dies down.

Transfer to secondary and lager for 2-3 months.
