As with some other beers recently, I'm not sure if this was infected at any point or just over-primed but all of the bottles have been foaming very heavily when poured. I have learned to mitigate this somewhat by pouring out a small amount then agitating the bottle to let some of the extra CO2 escape before continuing to pour.
The carbonation guideline for American ales & lagers is 2.2 - 2.7 volumes of CO2. Having used 5.0 oz. of corn sugar in 5.0 gallons of beer at bottling time, I effectively primed this beer to 2.5 volumes of CO2. For future American ales & lagers, I should consider priming on the lower end, 2.3 volumes CO2 for example. |
