Ingredients

5 gallons preservative-free apple juice
1 pack Danstar Belle Saison yeast
4 lbs frozen mixed berries (optional)
3 cans frozen apple juice concentrate (melted)
15 mL 88% lactic acid
0.5 tsp potassium metabisulfite (Campden)
2.5 tsp potassium sorbate

Process

1)Add 5 gallons of juice to fermenter, pitch the yeast on top, seal and ferment.
2)Once fermentaion begins to slow dump berries in (if using), fermentation will continue for another 4-7 days.
3)Add the potassium sorbate and potassium metabisulfite which is used to halt any further yeast activity, give it a gentle swirl to mix.
4)Cold crash at 32°F. After 3 days its ready to keg.
5)Pour the melted apple juice concentrate into the bottom of the keg.
6)Add the 15 ml of lactic acid
7)Add the cider on top
8)After filling the keg, immediately seat the lid with a burst of gas then rock it back and forth for a good 3-4 minutes, turning it upside down multiple times, before placing it in the keezer.
