Notes

12/29/20 chopped up the cranberries and mixed with honey, added Sodium Bisulfite and sorbate. 15 pounds cran. and 18 pounds honey, I altered above to match my OG reading.
12/30/20 Added two packs of Red Star Cote Des Blancs yeast stirred in then added Pectic Enzyme 1 ½ tsps. at 1/10 teaspoon per pound of fruit. Set up in brewroom at 60° in big blue tub with blow-off tube.
12/31/20 added 2nd Nutrient and ½gallon water.

Staggered Nutrient Additions (SNA): One teaspoon of Fermaid-K and two teaspoons DAP should be adequate for a 5 gallon batch. Mix them together for a stock blend and add them using the following schedule:

  • Add ¾ teaspoon yeast energizer/nutrient mix immediately after pitching yeast.
  • Add ¾ teaspoon yeast energizer/nutrient mix 24 hours after fermentation begins.
  • Add ¾ teaspoon yeast energizer/nutrient mix 48 hours after fermentation begins.
  • Add ¾ teaspoon yeast energizer/nutrient mix after 30% of the sugar has been depleted (usually 72 hours).
    1/5/21 added 2½ teaspoons of yeast energizer
    1/7/21 saw signs of yeast working
    1/28/21 Gravity 1.021 Removed Cranberries squeezed the bag had almost 6 gallons left. Move mead to garage to drop particles.
