Notes

Heat up 100L of water and add sugar before boil. Allow to boil shortly, then turn off heat, add apple and top up with cold water. Use cooling coil and heat-exchanger to drop to 20C for fermentation. add 2/10 of the sweetener when pitching yeast. Once primary fermentation finished, add flavor packets and/or fruit. Cold crash and add CO2
