Notes

Belgian inspired Washington farmhouse ale, 15 Gallon solera barrel project. Utilizing bootleg's Spring 2021 solera blend as the barrel inoculant, Skagit valley copeland malt (my favorite), Washington white wheat, Local distillery 15 gal bourbon barrel (oola), and Mt. Adams honey (support your local apiary!).

Rather than 3 year aging (55 gal barrel) then blending, going to test 9 month - 1yr.

Having to do a two stage mash due to equipment limitations, two 12lb mash runs (9/3). adding local honey after last mash.
