Notes
Use 24 oz mesquite chili honey (Lone Star Bee Co. Fiery Sweet Mesquite honey) and 3 lbs TX wildflower honey. No boil, just warm water to mix in honey and yeast nutrient. Use staggered nutrient additions or whatever nutrient regimen works for your meads.
If not enough chili flavor, either up the ratio of the two honeys (either 1:1 or 2:1 instead of 1:2), or could try steeping some mesquite-smoked jalapeño and/or habanero chilies in the mead. Or keep one gallon as is, add chilies to second gallon, then blend to taste...
