Pitched 2.5 grams of EC-118 yeast Rehydrated. Plan to do a Fermaid-K/DAP nutrient schedule. total of 1.5g and 2.9g of each respectivley. spread out over 24, 48, 72 and 7 days after initial yeast pitch

Added second nutrient addition (first one was done 24 hours after pitch but no sample was taken). Tasted very sweet. Refractormeter read 19 Brix, which converts to 1.068 with alcohol adjustment. |

Added nutrients. tasted slightly less sweet than last sample. Refractrometer reading was 16 brix which coverts to 1.049. |

Brix read 8.2 or so. Which translates to 1.000 sugar left. plan is to rack ASAP. not much flavor here so maybe makes sense to add some fruit to this one. |
