Notes

Bring 2 cups of water, chopped raisins, orange peel to a boil. Allow to steep 15 minutes with green tea bag. Strain and set aside to cool.

Add 7lbs of honey to fermenter. Add tea mixture to honey. Top with tap water to 2.5 gallons. Mix well. Aerate and pitch yeast.

Ferment 4-6 weeks at 65-70F. May require a secondary and tertiary fermentation.

Cold crash and bottle. Allow bottles to age approximately 3 months.
