Approx 200 kg apples (50/50 mix of cookers and eaters) pulped by hand with the oak 'clonker' and pressed in batches using the 30 lt fruit press. Adjusted recipe down to 104kg so that the starting gravity matched that in the recipe....sugar yield from these apples must have been lower than the benchmark used by the recipe builder.
Each 12 litre bucket of pressed juice had 1x crushed campden tablet added and 1x flat teaspoon of pectolase added. No tannin or acid additions |

Pressed juice had lovely juice flavour with a very pleasant tartness - hence no need for further acid additions. Colour from enzymic browning should give the cider a good finished colour - no need for tannin additions either |

First sample - fermentation has taken after 24-48 hours with almost a constant stream of bubbles. Clarity of juice in trial jar fluctuating between cloudy, opaque and clear, however more consistent (and cloudy) upon second sampling. Significant settled solids in the original pre-fermentation sample - will compare to this first true sample jar |

Stopped bubbling in airlock.
Really cloudy. Tastes very sharp and might need tempering a little.
Will check in another 24 hours before chilling |

Starting to clear - similar in colour and look to Thatcher’s Hazy. Quite sharp taste, need to temper down a little |
