Notes

Non enzymatic mash
-3 gallons of spring water and distilled at room temperature
-mash left overnight (10 hrs in refrigerator set to 45F
-removed brew bag and racked into kettle leaving behind last 1/4 gallon of sediment/starch

Topped up with distilled

water
Quick chill to 180 before adding honey then immediately chilled further. Added 1 tsp of lactic acid to fermenter (*next time add less (0.25-0.5 tsp) preferably in the kettle)

Pitched 1 pack of omega lutra at 80f.
Fermentation took 2 days then applied a carboy warmer overnight to raise temperature to 92. Then let temperature drop down to room temp before storing in refrigerator for 8 days.

Bottled with 2.5 oz table sugar (targeting 2.5 vol co2)
