Notes

I am still trying to find the right extract brew that comes out not to bitter and not to weak and has good flavor that I can produce in a total of 1 hour in the kitchen. Looking at the BU/GU ratio as a guide. Plan to brew this in March 2021. Not as dark as it should be, but I don't have any darker malt or DME in house.

Taste test done and I am super impressed. I took a sample 12 oz bottle from fermenter at day 5. Primed with 1 tsp table sugar in bottle and let sit at room temp (2 days got to 79 deg) for 5 days. Day 10 I chilled and tasted it. Very impressed. 5.25 % ABV. Tastes like 40 IBU calculated. Big citrus / lemon smell and tangy citrus taste. I will probably back off the bittering hops by a few IBUs, but other than that, this is a keeper. Loads of head and beer has a light orange hazy color. Beer in fermenter has cleared a bit since sample was taken, but let's face it, 10 days from brew to bottle condition and it is drinkable and impressive. Bottling this weekend and will see how it turns out after a week in bottles. Also FG was 1.012 and not 1.010.
