9/29/2019--1.111/26.2. Added 6-gallons of Lodi Gold merlot grape juice to .75-cups of bentonite slurry, 2-ounces of oak chips, and .5-TBSP of acid blend. Pitched 2-sachets of Vintners Harvest R56 dry wine yeast at 2355.

Purchased the juice and yeast from the LHBS. It was packed in a 6-gallon plastic bucket with an airlock in the lid. It was already bubbling when I opened it. I pitched the yeast 35 minutes ago but the airlock is already going crazy. I hope the R56 takes over and whatever is in there now adds character. Relax, don't worry, and wait for about a year or so.

10/21/2019--1.010/2.6 for 13.26% ABV so far. Racked to a fresh 5-gallon carboy and 1 .5-gallon mason jar. Little to no head space in either. Time to put it down for a long winter's rest. It tastes pretty darn good already.
