RO water will produce a clean seltzer however using tap has other ions which most online recipes say will produce unwanted white wine flavors but this can actually be a positive effect - almost acetaldehyde (green apple) will give you free flavoring! Otherwise, use 10cc of fruit extract per 5 gallon keg for the perfect balance. Carb at 2.3vols rather than recommended 3vols as this will eliminate harsh carbonic bite and will taste sweeter rather than sharp dryness. My friends and family have preferred the lower carbonation. |
