WLP041. Start yeast same time as brew prep, crash cool wort to 35 overnight then allow to raise to 65 add O2 (45 secs) then pitch. Used 2 packs yeast to 2L starter to achieve 300+ B cells. (Personal notes: strike 20 [email protected] 159 with 4 tsp salt using ro/di. take each mash tun up to 9.5 gal) top off kettle to 14-14.5 gallons with ro/di if needed.
