Designed from Brewer's Friend G40 history. Recent German lager sessions indicate the G40 is performing materially above the older all-session median, so this recipe is calibrated at 82% brewhouse efficiency.
Assign the existing Brewer's Friend Grainfather G40 equipment profile (profile ID 393366) after import. In Grainfather, select your normal G40 equipment profile so the app recalculates water volumes and drives the system.
RO water target:
Ca ~52 ppm, Mg ~0 ppm, Na ~0 ppm, Cl ~60 ppm, SO4 ~45 ppm.
For approximately 8.5 US gal total RO brewing liquor, add about 3.0 g anhydrous calcium chloride and 2.6 g gypsum. Scale additions to actual total liquor calculated by the G40 profile. Target room-temperature mash pH 5.30-5.35.
Fermentation:
Pitch 2 x 11 g packets W-34/70 at 48-50 F.
Hold ~50 F through the first half of fermentation, then allow 54-58 F, and finish near 60-62 F.
Spund near the end of fermentation if desired. Cold crash gradually and lager 2-3 weeks at ~34 F.
Closed transfer to a purged keg. Serve young, around 42-46 F, at ~2.3 volumes CO2. Do not fine aggressively; slight natural haze is appropriate.
Hop calculations assume Hallertau Mittelfruh at 4.0% AA. Adjust amounts in Brewer's Friend if the package AA differs significantly.
