Sugar removed; mashed hot (156-158F) to preserve long-chain dextrins for Brettanomyces, Lactobacillus, and Pediococcus during extended maturation in neutral red wine barrels. Minneapolis municipal water treated with CaCl2, Gypsum, and Lactic Acid to protect mouthfeel and buffer low-pH souring.
