Notes
Trying Omega Yeast for the first time. Make yeast starter night before - 1 pint w/ 3Tblspoon of boiled/ cooled LME.
Steep Caramel Malt 10' 155 - sparge w/ 170 deg waterr, into boil pot. add 1/3 (3.3lb) LME Wheat , hops, bring to boil 45'. off heat - add other 3.3 LME wheat, bring back to boil - 15'. Add aroma hops; top to 5 gallons w/ boiled water - take S.G. reading - refractometer 1.064 ! higher than I expected. cool wort chiller - to fermenter and add yeast starter.
Celeia = Styrian Golden Celeia. Staggered LME boil times to reduce SRM color of the beer to keep SRM lower compared to full boil using all LME for 60 min.
