Notes
Brute Farmhouse IPA called "Tropical Hayride"
This style mashes up the bone-dry, effervescent drinkability of a Brut IPA with the complex, spicy, phenolic character of a Belgian/French farmhouse profile, heavily saturated with the newest, most pungent tropical-forward hop tech.
Enzyme Trick (Optional): If you want a true "Brut" hyper-attenuation, adding a touch of amylase enzyme or glucoamylase will drop the final gravity to 1.000, creating an ultra-crisp, champagne-like body that forces the massive tropical fruit notes of the new Galaxy harvest right onto your palate. Use glucoamylase (such as White Labs Ultra-Ferm or Lallemand Glucoamylase 400) and apply it into fermenter.
Mash: 148 to 150F - 60 minutes. Try to keep it at the lower end.
At Flameout: Drop wort temperature to 180F then pitch the whirlpool hops additions.
Cool to 85- 90, pitch Kveik yeast. Let temperature free rise.
Dry Hop: Near the tail end of fermentation -- add hops additions on Day 4 or there abouts.
Cold Crash then carbonate 2.6 to 2.8 volumes
