My East Kent Goldings were a bit higher alpha acid, 6.3 vs 5.4 in the original recipe. I am also going to use the East Kent Goldings in place of the Willamette hops.
My water requirements did not account for the 1 quart of chocolate syrup added at 45 minutes, so I manually added that and took off 1 liter in my sparge so I wasn't over on volume.
dissolve cocoa powder with 5 oz corn sugar in 1 qt hot water to make syrup. Add syrup 45 minutes into the boil. The recipe does not say when to add the brown sugar, so I am going to mix with this so the sugar does not stick and burn to my brew kettle.
2-3 vanilla beans soaked for a week
in rum added to secondary.
