This is a Dark Saison / Bier de Grande that has been 3 years in the making. It's based off of multiple beers that I've had in South Pacific on deployment.
It's smooth but spicy the yeast mixed with honey dries the beer out and the bitterness is low based on the use of a whirlpool.
