I did 2.25 G sparge and had too much for 90 min so needed to use stovetop boil during even though gemeni thought I wouldnt need it. Do 6-6.25 strike and about 2 G sparge max. the 158 degree step was added to get as much as possible out of the old 1924 grain (5 months old) as was the 90 min @ 148 3 ML of lactic acid added to strike water The Biscuit and Aromatic malts add some acidity, so use a mid-range dose. 1t calcium chloride Keeps the 10% ABV fr om feeling too sharp or "hot." When adding the 2 lbs of sugar at the end of the boil, turn the elements OFF. Stir until dissolved before turning it back on to prevent scorching the bottom of the kettle. Pour slowly and no more pump as we don't want sugar in the line. Or even better take wort pull and do it on the stove top till fully disolved Side boil: Instead of reducing the wort to a dark syrup (which adds caramel), boil 1.5 gallons on the stove just to get a fast head-start on the BrewZilla's ramp to a boil. |
