Grate or thinly slice the ginger. Boil together with other spices for 1 hour, then add juice and sugar and allow to cool.
Add cooled wort to the trub left behind from a stout ferment, e.g. The Dark Crystal.
'Open' ferment (ideally in a food grade bucket with lid), no airlock, just cover the top of the bung with clean foil squeezed firmly to keep the bugs out, or leave the bucket lid on loose. Choose a warmer location, e.g. kitchen, aiming for 22-24 degrees C to push the optimum limit on the yeast.
After 1 week, transfer to secondary fermentor to strain out the solids.
Bottle using empty 2L carbonated beverage bottles (no root beer)
