Notes

Day prior:

  • Defrost and pulp blueberries

    Double decoction:
    1. 55C to 65C, 30 minute boil, thick
    2. 63C to 75C, 30 minute boil, thin

  • Transfer to BK
  • Boil 15 minutes. Record pre-boil evaporation for later
  • Seal top.
  • Cool to 32C
  • Record pH
  • Add lacto, monitor pH ~24 hours (target pH: 3.9)
  • Boil 15 minutes adding hops. pre-boil evaporation will need to be calculated to hit target gravity.
    Once boiling, add berries
