basically, take 100g of molasses or piloncillo and 200g brown sugar, 3pc star anise, 2 cinnamon stick and make a light syrup. Top off with 3L filtered water and transfer to your fermenting vessel.
rinse 1 whole pineapple well then skin. Add all the skins, core and maybe 100g additional pineapple meat to your mixture and seal with air lock. No yeast needed. Hopefully there is enough wild bacteria (lactobacillus) and wild yeast to kick off the fermentation for up to a week. Could happen faster. Once you are satisfied with the flavor, filter and package. Yes it will likely be sour. Lacto is a good bacteria for your gut. If it's too sour for your liking, cut it with juice to sweeten it up.
