Notes

This is a yet-to-be brewed, gluten free adaptation of Mike Tasty McDole's heralded Janet's Brown Ale.

Target OG should be 1.066-1068. Adjust base malt amount depending on your mash efficiency. Follow mash guidelines to maximize suggested enzymes (Ondea Pro and Ceremix Flex). Alternatively use a single infusion mash profile at 175F with rice base malt and Ceremix Flex (increasing that enzyme to 15-20 ml). Or with millet base malt, a single infusion at 165F.

Possible substitutions:

  • Substitute pale millet malt for the biscuit 4L rice malt (could then also decrease the gelatinization mash step from 175F to 165F).
  • Substitute roasted buckwheat malt for pale buckwheat malt for additional roast flavour
  • Substitute naked gas hog rice for the dark rice malt, or replace with dark roasted millet and/or additional caramel 240L millet.
  • Substitute or augment the buckwheat with roasted lentils or flaked quinoa for high protein, low lipid foam-positive replacement of wheat.
