Notes

Used a double decoction mash process. Approx 30% first decoction - thick, 40 % second decoction, thin.

Very long process. Basically an extra 2 hours for mash time. Heated mash tun for a few minutes after each decoction to elevate temp to target level after each step.

Chilled to 73 deg in approx 10 min with wort chiller.

Agitated and pitched yeast. 7:30 pm.

Fermentation had started when checked at 9:00 am next morning.

Fermentation set kegerator @65 deg.
