First brew - 7 gallons post-sparge. 6.25 after 1 hour boil. ~5.75 after cooling. 5 to fermenter. SG came in 1.038, so added 1lb light DME. More sparge/boil?

Added melanoidin malt after 1st brew day. Didn't do lower temp in mash - need for crispness
