Notes

Making (2) 3L starters @1.036 SG - 11oz DME

Added 1.5 campden tablets to the 28.1 gal.
Added 18ml of lactic acid - mash pH - 5.4!!!
Added 7ml to mash and 11 to sparge - then remembered that sparge water may not have needed it since the total alkalinity was under 25? Anyway, 7ml in the mash got us to 5.4

Shooting for 149 for mash - settled at 150 - was this recipe originally 148??

First - 1.083
Middle - 1.040
Last - 1.003 oops!
Pre-boil - 1.041
OG - 1.052? Maybe? Fermenting in carboys so tough to tell

Collected 23 gal. at 1.045. Added 2.25 g. to bring the pre-boil to
1.041. Boiled 90 minutes - collected ~ 19g in 4 carboys? Fermenter was in the shop. Down to 55 in NEW FRIDGE(!) and pitched the next morning. Up to 60.
