Notes

Day 1: Mash & sparge, collect wort. Boil for 5 min and cool to 100 degrees. Pre-acidify to about 4.5 pH with 1-1.5 mL/g of lactic acid or about 5-7.5 mL, add 32 oz berry-flavored GoodBelly Probiotics, stir, and purge tightly-capped cellophaned kettle with CO2. .
Day 2-3: Proceed with normal brew day. Boil for 60 min, add hops (3-5 IBU's) for 15 min, cool, and pitch yeast.
Fruit: Added a total of 3 pounds of Costco mixed berries to the secondary for 10 days.
