Colocar o fermento devidamente hidratado dentro do fermentador com o mosto, a fermentação ALE leva de 7 a 15 dias, manter refrigerado a 20ºC.

Começar a Manturação a partir do 7 dias (conforme atenuação estável), mantendo por mais 7 dias a 20º C. Nos últimos 5 dias baixar a temperatura para 0° e manter por 7 dias.
